School has begun again, for those that are attending. The air is cooler these days. The smell of rain has filled my home for the past two days. The wind has picked up so I’ve been enjoying the fresh breeze blowing through the open windows. I had to sleep with a blanket over the sheets last night. It feels as though I just packed away our winter comforter last month.
Summer is on the way out and fall is heading into town. I know it’s still exactly a month until the official change, but I’m excited for it! Fall is the best time of year. The colors of the fallen leaves that fill the streets put a smile on my face. The crisp mornings and the comfortable nights never fail to bring back childhood memories. My birthday, our wedding anniversary, Halloween, and Thanksgiving are all during this time of year. So much to celebrate and so much fun to be had, why wouldn’t I love it?
I’m already thinking about Halloween. Even though little tummy won’t be old enough to understand what’s going on still. That didn’t stop me from buying her some adorable costumes I spotted in a random store I was in. I couldn’t believe they were putting up Halloween decorations already. I thought to myself, Is it that time already? It sure is! Check out this cuteness.
Before the fall festivities take place and everyone forgets about summer fun I wanted to share this recipe for a quick cool down. In other parts of the country, and the world, I’m sure you will be experiencing the heat for a little while longer. So cheers! If you want them a little more spicy use chipotle chili powder. I would advise you not to use a full 1/2 teaspoon of that though. It’s a weird sensation to have something so spicy and freezing in your mouth at the same time.
Zesty Mango Pops
makes 6 popsicles
Ingredients:
- 4 ripe honey mangoes, flesh removed
- 11 ounces coconut water (I used Vita Coco Pure Coconut Water with Pineapple)
- zest and juice of 1 lime
- 1/4 to 1/2 teaspoon chili powder OR chipotle chili powder for more bite
Directions:
- Combine all ingredients in a food processor or blender, blend until smooth.
- Pour into 6 popsicle molds and freeze for at least 8 hours. Enjoy!
