Sophie’s Kitchen Vegan Toona

If you follow me on Facebook you probably saw me rave about the release of Sophie’s Kitchen’s latest product Vegan Toona. Sophie’s Kitchen is one of my favorite cruelty-free products. All their products are gluten-free and some are soy-free. Plus they are Kosher certified, Non-GMO verified, and they don’t use artificial ingredients. You couldn’t ask for a better convenience product. The weekend after I saw their announcement of Vegan Toona hitting the shelves I had to pick some up and try it. I thought it was going to be difficult to find. Fortunately, the first store I chose to look for it in had it stocked. Just so you know they have two varieties of Vegan Toona. They offer sea salt and black pepper. I love anything with black pepper, but I had to settle for the sea salt since the black pepper is not soy-free.

VeganToonaAbout the toona, I think it’s wonderful like all of their other products. It’s not quite like tuna (obviously and a good thing) so don’t expect it to be. When I first opened the can I was a little shocked. I hope this doesn’t turn anyone off, but I don’t know how else to describe it. It had the appearance of cat food. It was dark and packed in oil. It wasn’t the white meat I was used to seeing and I always bought tuna packed in water so that was different. The look wasn’t going to stop me from trying it out. I drained the oil and took a tidbit to taste. The texture was a bit tougher than I remember. Almost as if it was cured like smoked salmon. The taste was familiar though. It’s been a while since I’ve had canned tuna, but it’s hard to forget that taste.

I could have been super creative with this toona. More than anything I was craving an old-fashioned tuna salad. However, the version I made does have a few additions to my original. For the dressing I used Just Mayo. You can make it with as little or as much dressing as you’d like. I’ve always liked my salads with a lot of dressing so I used more. This was a wonderful quick and satisfying lunch. I can’t wait to get more Vegan Toona to see what else I can make.

Toona Lentil Salad

Toona Lentil Salad

vegan, soy-free, nut-free, gluten-free

makes 4 servings

Ingredients:

  • 1 can Sophie’s Kitchen Sea Salt Vegan Toona, drained
  • 1 cup cooked green lentils
  • 1/2 small yellow onion, diced small
  • 1 tablespoon chopped capers
  • 2 to 3 diced pepperoncini peppers
  • 1/2 tablespoon lemon pepper
  • 1/2 teaspoon cayenne OR sweet paprika
  • 2 to 4 tablespoons vegan soy-free mayo

Directions:

  1. Combine all ingredients, except mayo, in a medium bowl.
  2. Add desired amount of mayo and stir until well mixed.
  3. Serve on top of a salad like I did or in a sandwich. Enjoy!
