Plastic Cup Fruit Pops

_DSC1531All through my pregnancy I have been craving fruit. Fresh fruit, dried fruit, frozen fruit, any kind of fruit. Once it started getting hot and before we got our swamp cooler going I had to have a fruit pop every night before bed to cool down. We were buying those Outshine bars but making popsicles didn’t seem that hard so I wanted to give it a shot. I would love to have a popsicle mold one day. Unfortunately I had to make do with what we have for now which were plastic cups leftover from our housewarming party last October.

I did have to buy the popsicle sticks (not as easy as it sounds). I wasn’t sure if craft sticks were safe to use for food so I was trying to find popsicle sticks at the grocery store. Apparently you can’t just buy popsicle sticks you have to buy a candy apple or banana dipper kit to get the sticks. The banana dipper mix wasn’t vegan so I got the candy apple kit. I’ve always wanted to make candy apples anyway. That sounds like a post for another time.

Makes 8 large popsicles


  • 1 pound of fresh-cut pineapple chunks
  • 1 pound of fresh strawberries
  • 1-1/2 cups apple juice
  • 2 tablespoons agave nectar (optional)

Materials, 8 of each:

  •  9 ounce plastic cups
  • popsicle sticks
  • parchment paper squares, large enough to cover cup
  • rubber bands

Fruit pops


  1. If you would like chunks of fruit in your popsicles take a few strawberries and a few pineapple chunks and dice them up, set aside.
  2. Place remaining strawberries and pineapples in a food processor along with the apple juice and agave nectar. Blend until mixed and smooth.
  3. Evenly divide mixture between the 8 plastic cups.
  4. If using fruit chunks now is the time to put them in. All I did was place the chunks on top and used a popsicle stick to push them down.
  5. Take a parchment square and cover the cups securing them with a rubber band.
  6. Using a knife or scissors puncture a small hole in the center of the parchment square and insert the popsicle stick into the slit.
  7. Freeze overnight.
  8. To remove popsicle from cup take scissors and make a cut on one side. Tear the cup the rest of the way and the popsicle will be free.

These pops are a little too big so if you are making them for kids try using smaller cups. You’ll obviously make more than 8 if you do that too. The apple juice settled to the bottom while the fruit stayed on top so it was interesting to eat. It starts out hard and icy and eventually gets easier to eat. I’m not sure how to make them more uniform. I sliced the strawberries thinking it was going to be fine. They’re not fine so that’s why I recommend dicing them. The strawberries freeze super hard so it was like trying to bite into an ice cube. However the pineapple chunks have no problem freezing. They flake away easily when you eat them.
